This uniquely South African shrub has a pleasantly sweet and mildly earthy taste, with soft fruity and floral undertones and notes of vanilla and honey.
Rooibos is harvested once a year in the hot summer months and then laid out in drying beds in the sun to oxidize where it turns “reddish brown”, resulting in a unique and distinctive aroma and flavor.
Green Rooibos is the unoxidized version and remains.
It has a lighter, less earthy flavor, than “red” Rooibos with more grassy and herbal notes.
